Left work on time today – unusual for me.
When my husband came home he was as tired as I was. However I decided to cook using the left over potatoes and eggs. He suggested this smashed eggs receipe.
It is first attempt at cooking this comforting dish.
1 1/2 potatoes
2 garlic cloves, peeled
6 medium eggs
peel the potatoes and cut them length-wise into thin chips
when the oil is hot at the potatoes in batches and fry
when fried place on tissue paper
when all potatoes fried, place back into pan and add eggs garlic and seasoning
allow egg white to set and the yolk stay soft and runny
